My custom is to start a new thread when I have been asked a question such as "..any ideas for cooking for myself?" [in paraphrase]
As you'll notice, olive oil is my favored "fat" for cooking and "dressing."
Here's an idea for a solitary meal...
Food stuffs: 6 oz beef steak - lean cut, lemon pepper to taste
1 lg Portobella mushroom - coarsely chopped, 2 T yellow onion - diced
1 ear fresh sweet corn - de-silked but with husk intact, butter and salt to taste
1 thick slice sourdough bread, 1 T butter 1 t garlic - minced
1 c shredded Romaine lettuce, 2 T ea celery and carrots - shredded, 1 radish - diced, 2 T ea Balsamic vinegar and olive oil, 1/2 t ea frsh oregano and basil - chopped
A bit of olive oil...
Method: In a small fry pan, heat 2 T olive oil on high heat. Season the beef to taste with a sprinkle of lemon pepper on each side. Cook to preferred doneness (I like my beef rare).
In a small sauce pan heat 3 T olive oil on high, add in the Portobella cook while stirring for 5 min, add in the onion and cook, while stirring, until the onion is droopy. (I like adding a "twist" or 2 from the peppermill)
Soak the ear of corn in water, drain and place on a plate, microwave on high for 3 - 4 min, turning 1/2-way through, shuck, season with butter and salt to taste (I like plain corn)
In a small fry pan, melt the butter on med-high and then stir in the garlic for 3 - 4 minutes, and then toast the bread lightly on both sides in the garlic butter.
Toss lettuce, celery, carrot, radish, oregano, basil vinegar and oil together...
