They are about 75%-80% of the dry weight of our body and they contain
carbon, hydrogen, and oxygen and other elements.
In the presence of oxygen they may become oxidised, a chemical interaction between the oxygen molecules and the surface of the substance- in this case the protein. So not exactly death, but the start of a damaging process.
