Gallbladder gone but still in pain

This is long so bear with me. I have been having sharp stomach pain since July of last year. My primary care doctor sent me to a general surgeon because an ultrasound found an inflamed gallbladder with gallstones. I had to wait because COVID spiked here and no "elective" surgeries were being performed. I finally got the surgery at the end of August. The pain didn't go away. It was dismissed as carbon dioxide from the surgery and my body "getting used to the absence of a gallbladder". I was patient and after 6 weeks I reached out to my primary care to see gastroenterologist. My symptoms got worse and I got really sick and did a video appointment with a NP at my PCPs office. She told me that I needed to go to the ER and get fluids. The ER did a CT scan and found nothing wrong and I was told, "We really don't know what to tell you. The ER is for life threatening illness.". They didn't even finish the IV before they sent me on my way.

In the last 6 months I've had an endoscopy, MRCP (special MRI), colonoscopy and 2 CTs. A few things have been found but nothing to explain my pain and nausea. I am getting to the point where I just want to stab myself and say, "LOOK, THERE!" I won't but i am beyond frustrated. My gastroenterologist and his PA are awesome and doing their best to get to the bottom of my issue. I just feel like maybe they are thinking, that I am just being a hypochondriac.
