If you are referring to the holes in tonsils when you are healthy, they are sometimes called "scar pits".  These are left from previous infections of the tonsils such as strep or tonsillitis. Small pus sacs form on the tonsils while your sick, then the tonsil cleans off when you heal.  This tends to leave irregular shaped holes or "pits" on the surface. Those that have had many infections can develop tonsils that look like the surface of the moon. An exudate is any fluid that filters from the circulatory system into lesions or areas of inflammation, so this will only occur during the infection or challenge.

The tonsils are glands that are actively working to manage bacterial load. The holes are normal. The tonsils release exudate through the holes. If they are very red, inflammed and sore you may have tonsillitis and need antibiotics.
