Does Herpes infection cause extreme fatigue?
My girlfriend has been feeling suddenly very weak and tired, with a little upset stomach as well (diarrhea).
I have been exposed to HSV recently, had some weird symptoms but never developed sores; could this be a sign of her having picked up the infection?

Most likely you would have lesions appear to be swabbed. If not then the chance of infection is quite remote. A blood test for antibodies should be taken 12 weeks after exposure.

I haven't been tested yet because my potential exposure was very recent, what's the window for testing HSV?
