What could be causing my diarrhea, abdominal discomfort, and weight loss?

Hello everyone. I am reaching out here today to anyone who has either experienced these types of symptoms or might have suggestions as to what might be going on. Let me start from the beginning. About eight months ago, I had a pretty heavy bloating feeling in my stomach. When I would eat I would feel a burning sensation in my stomach. After a few days the bloating went away but I started feeling fluid come up into my esophageal area causing a burning in my chest. Was thinking this was maybe just some really bad acid reflux but soon after that I started having frequent diarrhea and very odd-looking stools. For a few days after that every time I would eat something it would go directly through me and almost look like a clump of dirt in the toilet. I've never had any blood or anything like that. Soon after, it seems like my stool had returned to normal for about a week. But then soon after that and pretty much ever since I've had frequent diarrhea, I see food particles frequently in my stool. My stool for the most part has not looked normal for eight months. I have also had frequent gas and burping  after meals. I have gone to my GI. She has run pretty much every test she can run. I've had blood work done three times. One time my liver enzyme was very slightly elevated but not by much. I have had two blood tests since and my blood work has come back normal every time. My doctor then did an upper GI and a lower GI. Both results came back normal. They did locate a benign tumor on my esophagus. But it has been confirmed to be completely benign and of no concern. I have also had a stool test and breath test done both coming back normal. I have  My stool for the most part has not looking normal for 8 months.  Some days I won't have any but then other days I'll have 7 or bouts. I never have any nausea or vomiting but I do have frequent discomfort that moves around. The discomfort is never in anyone particular place. Just to give a little background into my health, I was drinking pretty heavily for the course of about 3 years. I would average about 3 - four shots of whiskey at night after work. Never really went on any binge  or anything like that. Would just relax at night with a glass of whiskey. I have stopped drinking This is just been terrifying  I apologize for the long winded post I just wanted to be sure I covered all of the bases. Any feedback were suggestions would be greatly appreciated.
