HSV-1 Test

I have had cold sores my entire life, I am now 45.  2 years ago I was hit with a severe nuerological case of Lyme Disease.  

I was tested for viruses..many came back positive. HHV6, EBV, HSV-1.  I have seen two doctors, they disagree that the IgG is past infection. One said it cannot be active unless the IgM is positive. Is this true?

I was put on Valtrex, EBV titers dropped (as of last test) but one of my doctor's is extremely focused on my HSV-1 test that is IgG positive (extremely high) and the IgM is also high.

I have wondered and cannot find, what are SYSTEMIC HSV-1 symptoms?  Valtrex is not lowering this titer oddly enough, while the other's are dropping.  

The doctor focused in on the HSV-1 keep saying I am shedding, I have no idea what that means, except that is is obviously active since the IgM is positive.  I think he believes many of my symptoms of pain, neuropathy are not from Lyme Disease but from a systemic herpes infection, made very active we believe by a cortisone shot.

1) IgG - does it mean active or past infection if positive?
2) What are the chances of this being a systemic infection with HSV-1 and what would the symptoms be?
3) With Valtrex not working on the HSV1, what would be the next medication to use?

Any other advice would be appreciated.
