Low iron, ferritin and iron saturation and high B12(folate)

I have a long history of iron deficiency anemia requiring iron infusions due to gastrointestinal disease resulting in large and small bowel surgeries.  Currently, my hemoglobin is on the lower end of normal = 2.5 but my iron = 26, saturation = 6% and ferritin= 8.  I also just noticed that my B12 was high (1230) which has never been abnormal.  I have been feeling awful with fatigue and light headedness for the past month and finally saw a hematologist.  
My concern is that with the normal hemoglobin, they will do nothing until it becomes abnormal...which it eventually will based on what has happened over the past several years.  Has anyone experienced similar issues or have any input that may help.  I am concerned that I will have to continue to suffer until it drops "low enough".  I'm also not sure why my folate is now elevated.  Any information would be greatly appreciated. Thank you.
