chronic loose stools

i'm a type 1 diabetic, diagnosed 4 years ago, 36 years old.   also diagnosed with celeac.  i follow a strict gluten free diet.
i am also vegetarian, and i limit dairy consumption.  
for years now i have had loose stools.  no abdominal pain, or discomfort, or cramping.  and i don't feel sick.   i have 3-4 bowel movements in the morning,  the first being the most solid, then progressively getting worse.  also finding undigested food in bowels.
the situation improved greatly, over night while i was on antibiotics for an unrelated illness, but then worsened again when i stopped taking them.
i have tried probiotics, but without success.  i have tried altering my diet, thinking i have too much fiber, but nothing seems to help.
i mentioned it to my doctor, but she didn't seem all that worried and didn't want to prescribe anything.
i feel like this will never end!  should i see a specialist?  i am making an appointment with an endocrinologist to try to get my diabetes under control, should i see someone else as well?

i am very careful about my diet, but perhaps the bread i'm getting has trace amounts (not made in a dedicated bakery).
also i wonder if it is a soy allergy.  i think i will go grain free and soy free for a month and see if i do any better,  thanks for your input.

My 11 year old daughter is diabetic and vegetarian and my grand daughter is celiac,she was diagnosed when she was 1 years old, she can not tolereate the levels of gluton that are deemed to be sutable for celiacs, as there is a level of gluton that celiac uk pass (soon to be changed to a higher level) Most celiacs are ok with these levels, maybe you are like my grandaughter,as it sounds like your getting gluton from some-where,as you are finding undigested food in your stools. hope your feeling better soon
