I had leg pains, aka neuropathic complication, now no longer .
As long as my A1C is less than 5.6% and my glucose level is controlled at <140mg/dl at ,ALL TIMES, then my leg pains disappears

is 30 g of carb too much / meal? This is very individual.
This very much depends on what that 30 g of carb does to your blood sugars. IF you are high at 2 hours after eating that 30 g of carb, despite appropriate insulin dose, then it may be too much for you.
If your blood sugars are on target (< 120 at 2 hours), then it may be fine.
If you are on target at 2 hours, but later go too low it could also be a sign that these carbs are too much for you.
The very strict low carbers use 6 g of carb for breakfast, 12 for lunch and 12 for dinner. This carb comes mostly from non-starchy veges and dairy like cheese.
What insulins do you use?
I am not on insulin though I am diabetic. I think 30 g of carb is good.
