IBS, IBD, EPI, or other.pointers?

I am 34, male, and I have a history of stomach issues since my childhood. I have always had issues with lactose intolerance, fried foods, and I have been trying to maintain a gluten-free diet for about 3 years now. My issues as a kid were never really looked into until I started having more flare ups in my early twenties.  I have had bouts of upset stomach flare-ups, often accompanied with extreme bloating, horrible smelling flatulence, gurgling, indigestion, vomiting ( some occasions), nausea, and bouts of constipation and diarrhea ( constipation is more common). This started when I was a late teenager and has progressively gotten much worse into my 30's. I had an upper endoscopy and colonoscopy which the doctor noted I was healthy with the exception of GERD. I had a CT done last July, and my doctor's recommended having my gallbladder out, which I did after an attack that put me in the ER overnight.

I have been taking prescription Prilosec. My GI doc tried to have me take Linzess for 3 months but the side effects only exacerbated how I felt. I am also on  Armour Thyroid, an antidepressant Lexapro and Ativan, and I also take a multivitamin, vitamin b12, and Vitamin D because I have had reoccurring leukopenia and anemia in my CBC blood tests. I recently had the Prometheus blood tests done to assess for IBD and Celiac, but I am still waiting on results... I often have these flare ups at odd times, sometimes after meals. The bloating and indigestion in my lower bowels can be excruciating, common farts and rare burps horribly smelling, and pain will even radiate to my mid abdomen and chest. My stools are variable sometimes solid and greasy, and sometime soft and incomplete. I rarely have a normal poop, and I strain a ton as well.

I mostly try to eat healthy and I workout everyday. I try to eat protein and supplement with fiber, eat a Quest bar, and eat plenty of greens and fruit. My vice is I do like sweets, which I have tried to cut down, and I have also cut down on drinking any wine and other alcohol. I try to drink a gallon of water everyday, and I still have these problems... Could this be EPI of the pancreas? What else should I do? Food diaries don't help, meds aren't helping, and I have seen multple doctors... I am at a total loss....
