One year with abdominal pains and now yellow stool?

I started with abdominal pain in all my organs one year ago. I've had CT, MRI Hida scan, colonoscopy, endoscopy and everything comes out normal.  Blood work comes out normal tool.  The only thing I noticed was a change in my cholesterol levels; they go fro high to low.  My pains are in the center where my esophagus is, on my rib cage (but not chest area) and some strange tearing like pain on the sides where the small intestines is.  At times, I will have a some pain where the gall bladder is located it.  I have been having orange stool for about a year now and now it started to look yellow.  It goes from yellow to dark.  The doctors can't find anything.  They ruled it as IBS, but I just don't feel the IBS symptoms (cramping, diarrhea).  I do have lose stool like tooth paste, but no real diarrhea. Please help me figure this out.

I was checked for Celiac and was negative.  I just had a stool checked and the doc said I might have pancreatic insufficiency which I am really worried about.  I don't drink or smoke.  I just hope all this had to do with my gall bladder.  As far as diet, when I did a 6 day juicing of organic vegetables and I did notice that most pains went away.  
I am starting a 3 day stool test tomorrow. The GI has me eating 100 g of fat daily for six days and on the 4th I am collecting all my stool.

I have a history of IBS and gallbladder issues for years.  Off and on I will have orange (clay colored) and sometimes yellow stools.  I have found that this usually happens when my digestive system is out of sorts or seems to be inflamed.  Sometimes my stools will be greasy or fizzy looking if that makes any sense, esp if I've eaten something with a higher fat or rich food content or eaten a lot of dairy products.  I think I may be a bit lactose intolerant.  I am diabetic (controlled A1C is 5.8), but my cholesterol runs a bit high as do my triglycerides.  What kind of diet do you eat and have you noticed this happens more with certain foods or do you think something in your diet can be triggering this?  I have a friend that wants me to get checked for Celiac disease.  Have you been checked for it yet?  I don't know if that might be causing your problems or not, but it might be worth a shot looking into and also keeping a journal to help you notice if it happens more with certain foods you are eating.  Good luck and best of wishes!
