Malabsorption

I have had some malabsorption/loose stool issues and I can't figure out what it is. I have not lost any weight, but after coffee/beer and at random I have greasy stools with mucus. I did a stool test and am awaiting feedback and I also tested negative for HIV which malabsorption appears to be a symptom of (thanks Web MD for making me a hypochondriac)

Could this be a gluten problem? Generally healthy, but have asthma and bad anxiety and stress which is constant.

The 'greasy' stool could also be the result of gallbladder or pancreatic issues as well as the fact that if you have something like celiac disease, you might have some disturbance to the lining of the small intestine resulting in fat malabsorption. Hopefully the testing will give you some answers.
