My mother experiences Atrial fibrillation (excessively fast heart beats) when she eats something with a lot of fat or becomes anxious. She had her gallbladder out and it did not resolve the A-fib. I mentioned this because there seems to be a connection between some heart symptoms and the digestive system but the removal did not resolve it.
If you're not having any problems with your gallbladder other than the low ejection fraction, it may not be a good idea to do so. Your ejection fraction is a bit low, but not horrendously so, and these days it seems as if people who have just a low EJ - and no stones or outright miserable problems - seem to have more problems afterwards.
If you've been taking PPIs for a diagnosis of acid issues, those meds may be causing palpitations. Most of the PPIs list heart conduction issues as one of the side effects.
