(Diet) same everyday

So basically I struggle eating and would like to have a simple one off meal that's serves all my nutritional needs. I just forget to eat and because of this I'm underweight. Trying my best to put weight on but it's hard for me.

So I came across homemade protien bars. made from oats,protien powder, peanut butter,almonds,milk, honey,chocolate, almonds and I decided to add in a multivitamin crushed into the flatjack mix.  Isn't much fiber tho. Plan on eating around 2000 calories of the stuff daily. Would it be healthy eating this everyday? I do plan on eating other things like snacks and so on with water.

Some details incase needed. Male 21 135pounds.

My daughter has trouble eating.  She is taking Purple Coneflower Root  (Echinacea) which gives her  an appetite.  She is also taking a Whey protein shake twice a day to get the calories she needs to gain weight.   She gags if she eats too fast or too much and it can make her vomit.  It can't be the regular Echinacea - it has to be the root.  It makes her hungry enough that she doesn't forget to eat.  - Hope this helps you too.
