need feedback for some peace of mind

My encounter is as follows:
- on April 14th I had a sexual encounter with another man where he performed oral sex on me "not risky to my knowledge".  On two occasions he inserted my penis twice inside his rectum without a condom and I pulled out very quickly, I got mad and left his place.  He mentioned he is clean and that his last encounter was 4 months ago with another man.

Symptoms as follows:
- April 29 or so developed knee pain on my right knee. It was painful enough that I had a hard time going up and down the stairs.  I went hiking on April 24th. I wasn't sure if this related since the time span between the hike and the pain is a bit too long which is 5 days.  The pain kept switching between my right and left knee for about 2 weeks but NEVER experienced the pain on both knees at once.

- May 14 severe watery diarrhea lasted about 5 days and always mostly in the morning after waking up and after eating.

- Some time in mid-May I had drenching night sweat for one night.  Had few other night sweats but very lightly. 3-4 times in total.

- NO FEVER OR RASH

- I'm aware symptoms are not an indicator.  Are these ARS symptoms?

- I'm going to get a blood test on June 7 for HIV and STDs.  Is it too early for HIV testing?

Ok.  I can wait a bit longer for the tests if thats the case.
