First of all you shoud learn more about the all STD. I can understand what you are goiong through but we cann't change anything what we have done. I'm also going through.
You can take all STD test but as I said you must wait for 3 months to get test for herpes. If all test comes negative, test again after 3 and 6 months later. Most people ever show any symptoms of hereps!
At this moment be patient. Hope you are safe. Its very too early to daignose. Next time have safe sex unless if know your partners sexual history!
I am a male, the only blood was from her and I do not have any breaks in my skin. She was not and is not having an outbreak.
Is there any test that can be done in the meantime and what will be the first symptoms? Will I have physical signs first or discomfort?

I guess you are a male but your profile says female. The risk is low if the infected person doesn't has any outbreak but no assurance, you can get infected when she has viral shedding( virus present on the skin but not outbreak) herpes is bascially skin to skin pass on. What I guess you are in risk because yours was unprotected sex. Was the blood from your penis?Any broken skin? then again you are in risk! I'm not scaring you trying to give the information what I know.
You have to wait for 3 months to take IGG blood test for herpes virus 1/2. Incase if you develop any lesion, blister,sore get swab test immediately because the virus active in first 48hrs,
