I started having pelvic pain when I was 17. My family doctor thought it was just a UTI so I was on and off antibotics for over a year, Finally one day I went to the ER for the bladder pain and a nurse gave me the number to a specialist.
He did several test to check for IC.
I had one test where they watched me urinating to see if I was able to empty my full bladder and if I had pain while urinating. They inserted a catheter to test how much my bladder could fit.
Later I had surgery where he went in with a camera to see my bladder wall. He said it was very very red and inflammed. He said from all the tests it did show signs of IC.
I was given pain meds and started on Elmirion. This is the only drug used for IC and it has a 60% chance of helping. I took it for 8 months and had no positive benefits.
I was put on a antidepressant called Amitripthyline with is used for chronic pain and that does help some. I just try to watch what I eat because alot of foods do trigger bladder pain.

12 weeks ago I had hip surgery. it turns out my problem was labral tear & impingement. it was a deep pain & we all thought it was obgyn related.
I guess that means 3 of my 5 surgeries were for nothing. My hysterectomy, ovary removal & looking for endo was all for nothing

I would go back to a urologist if I were you. There are so many options now a days for things like that, some may be minor surgery, but there is something that can be done. Is there anyway you can find a female urologist? I am not bashing the male ones, it is just that a female will totally understand our as some call it "the female plumbing".
You need the entire system looked at "all pipes"...even your kidneys...

a year ago, I had a problem with urine retention, then they made me drink 40 oz of water for an internal ultrasound. I couldn't walk in, I had a referal to an urologist who happened to be on the second floor and got up there, double over, he took me & drained me. Then I wore a catheter for a week. He then called me back for urodynamic testing, but I couldn't void (I blamed it on shy bladder) so I failed, He didn't know what to do for me so he said just keep a catheter with me & when I need it to use it.
When I was drained I had 700 Cc in me.

My urologist did something called a cystoscopy. They put a camera inside the bladder to look inside of it. She told me my entire bladder wall was inflammed. She did do other tests as well, but I can't remember what they are called. One was to see how your urine flows standing up while you are being x-rayed. I apparently also have a slightly fallen bladder.
Have you seen a urologist? My problem is not pain, it is the constant going. I only feel comfortable when my bladder is completely empty (literally)...
