Gall Bladder IBS or something else

Since 2000 I have suffered from spells where I either have diarrhea (4-6 weeks on average) or constipation (1-2 weeks).  Within the last month I have now been to the ER with a suspected gall bladder attack.  I had right upper quadrant pain behind the liver, coming in waves.  I was also nasuseated and had heartbun.  I also had yellow burning diarrhea for 24 hours before nd 4 days after this attack.  At the ER i was given prescriptions for heartburn med and bentyl.  Nausea and heartburn are not common for me, but PCP also prescribed phenergan for nausea.  The Bentyl helps with the pain some.  Last week I had a HIDA scan showing a 59% EF, normal but lumpy liver and not much else.  The CCK portion of the scan was uncomfortable in gall bladder area and aggravated my kidneys and kidney stone -- that may be also from the dehydration as a I had been NPO for 10 hours at end of scan.  Since the ER visit my diet has been apples, banana bread (home made), cherries, grapes, watermelon, california sushi rolls (rice, avacado, cucumbers, crab meat and carrots), baked potatoes with small amounts of butter, low fat cottage cheese, low fat yogurt and steamed rice with reduce sodium soy sauce.  Noodles seem to aggravate the pain and cause diarrhea.  So does whole wheat bread, peanut butter, whole milk, butter in excess of a tablespoon and anything with fat or grease.  I have lost 21 lbs in 32 days (I was 171 at 5'7" and am now 150, which is a good weight for me).  I have no appetite and often now have to use the restroom 3-5 times daily.  I have had 3 situations where I nearly could not control my bowels.  My pcp wants to put me on elavil, which is contraindicated by my psychiatrist, who would have to put me on lithium.  I have not had any other testing.  What additional foods can I eat, and what additional tests could I have?  Are there any supplements, teas or anything else that can be recommended?  I am tired and weak.  I can barely make it through my 10-12 hour stressful work day.  I cannot quit my job or reduce the stress much--I own the business and spent 9 years getting licensed.  Any help is appreciated

Have not been tested for either to best of my knowledge.  

my blood work at hospital was unremarkable.  Liver functions normal range, cholesterol way low (sub 90), blood glucose was good (82 at 8 hours fasting).  Dr suggested eating red meat (no way in heck), eggs and butter for cholesterol issues.  Slightly anemic and thryoid was low normal.  At ER they took 9 vials for testing.
