Hi there. Well, maybe he could try the dishwashing again but a shorter first few days of work to ease into it.
If he has these mental health disorders, I'm sure you work with a psychiatrist. Often they have excellent suggestions in your area that would be open to someone like your son applying for a job.
In truth, it might be beneficial if he began some type of trade school. Unless he is also cognitively delayed, mental health does not affect intelligence and learning some type of trade should be possible. Plumbing work, electrical work, etc. are good options. He goes in, does a job and then is done. Rather than the hustle and bustle of lots of people and noise that can be overwhelming around him.
food for thought---- if he can attend some type of trade school, that would be helpful.
But I think a really good place to start is his doctors to find out if there are any organizations in your area that are there to help young adults with disabilities find employment or if there are any places they know of to seek employment. good luck
Oh, and I admire your excitement for your son. You sound like a wonderful cheerleader for him. I parent a child with special needs as well and some days can feel very long.
