Yep I findz the coolezt stuff. :P I have to hide my brocolli in the mince. And cabbage tastes fine in spring rolls at least. Thomthod, yes the word moderation is what I meant..nice to read between the lines. :)
Yes steaming takes out the cruciferous properties! Like red star says in moderation.
Interesting. You always have cool articles to share. Love it!
So what you're saying is that...I can eat cabbage & broccoli?! Yay! =)
It's a shame though cause brussel sprouts taste like bite size cabbage. Thank you! I'll buy a couple heads of cabbage today.
I found this article interesting: Delicious Obsessions: Help Your Thyroid by Limiting or Avoiding Goitrogenic Foods. She talks about experimenting with both raw and cooked goitrogens and noting the effects afterwards. She used to have a tense, tight feeling across her throat like a constricting of the airways. After about a year of avoiding these foods, she retested them and had no reaction.
"While I have spoken to many people who experienced the same reactions I did, there are others who have thyroid conditions who never had any of these issues. I advise experimenting, like I did, and see what you find. Considering how many vegetables are on this list, it would be a shame to eliminate them if you don’t have any reactions. But, for those who do have reactions, eliminating them, even for a short period of time, can make life a lot more comfortable!"
I should of ended my last comment with: if you aren't having any reactions. :)
I felt weak and dizzy after eating 2-3. First time I ate it was at a buffet and figured it went bad but my husband ate it without any issues. I bought it last year to make at home and immediately felt it again. I asked my husband and my sister if they thought it was good and they both said they loved it then I decided to come out and ask them if they felt the same as I did and they both said no. That's when I realized it was just me and maybe I should stay away from it.
I love steamed cabbage and broccoli, I normally have 2-3 servings. I stopped eating them after I read that they can affect the thyroid in a negative way which most likely is the goitrogen.
What type of reaction? I wouldn't eliminate goitrogens but just avoid eating excessive amounts.
Cabbage and broccoli are my favorite vegetables including Brussels sprouts. I have an immediate reaction to brussel sprouts though. I've been abstaining from them since I heard about this, does steaming work to remove the goitrogen?
Excerpt from Western Price Foundation - Bearers of the Cross: Crucifers in the Context of Traditional Diets and Modern Science...
"Most forms of cooking reduce but do not eliminate the goitrogenic effect. Microwaving cabbage reduces the goitrogen bioavailability to one-half; steaming broccoli reduces it to one-third; and boiling watercress reduces it to one-tenth.
Boiling not only leaches goitrogens into the cooking water, but also brings the vegetable to a higher temperature, causing a greater thermal destruction of the goitrogens within it.
Boiling cabbage for just five minutes results in a 35 percent loss of goitrogen activity; thereafter, each additional five minutes results in another five to ten percent loss. By thirty minutes of boiling, 87 percent of the goitrogens are eliminated. Cooking also greatly reduces the formation of nitriles.22"
None. If you still have some thyroid function left, you want to avoid goitrogens (you can google a list), which can interfere with thyroid hormone production in the thyroid (they don't affect meds). Cooking destroys the goitrogenic effect, so you only have to avoid them raw.
