It's true!  WE can do this together.  I have been making more dishes that are made with the meat mixed in rather than a big slab for each person.  Makes more go farther.  One of my favorite places to shop before I hit the grocery store is the Dollar Tree.  May sound crazy, but they have an awesome frozen foods section with frozen veggies, frozen fruits, and some frozen fish (I usually get tiliapia filets 2 for $1) as well.  Sometimes when I am lucky they also have whole grain pasta.  ; )  Something that I have had wonderful success on as of late is making bread.  I got an inexpensive ($10) bread maker on Ebay and ordered a 25-pound bag of wheat flour.  When I calculated it all out I can make a loaf of delicious wheat bread for about 65 cents.  That's a huge savings over buying expensive whole wheat bread at the store and it's really easy to make in the machine.  I have also made whole wheat pizza dough and whole wheat cinnamon raisin bread in it.  My kids love that machine and are always wondering what might be in it today.  ; )  The best part is that I can adjust all of the ingredients to be as healthful as possible.  I can pick the oil, the type of sweetener, etc., so I know exactly what is going into the bread and the price is awesome.  I also discovered this really cool lady on Youtube....you have to look her up for some great ideas.  Look her up on Youtube, her shows are called "Depression Cooking With Clara".  She started making these videos two years ago when she was 91.  She shows how to cook things like would have been eaten back in those days and talks of how things really were.  I am incorporating some of her ideas.  If a person was to use her recipe ideas with whole wheat pastas, a few added veggies, etc., you could really have some inexpensive filling dinner ideas.  I encourage you to check her out!  If for no other reason....she is a living breathing history lesson!  And I know for me to hear her stories....she put things into perspective.  We don't have hope people..... WE ARE Hope!

Ranae has a good point about the way we prepare our food.  Take a regular white potato for instance - the calorie count of the potato is actually very little, plus a baked potato WITH the skin is loaded with potassium and other vitamins/minerals.  It's the butter, sour cream, cheese, bacon bits, etc that pack in the calories.  Has anyone tried plain yogurt instead of sour cream?  Or low fat beef broth, with salt and pepper in place of the butter?

The frozen food aisle is great for getting the veggies.  Frozen veggies can be used for soups, stews, casseroles, etc.

As more people lose jobs, face pay cuts, etc we might all need to learn to be very creative in our cooking in order to get good healthy food at reasonable prices.

The information that Dr Park posted is definitely food for thought for all of us.  With stress levels rising daily, lack of sleep may well become an epidemic right along with the weight gain.

Let's all hang on and stick together.

gokuangel - Am so very sorry to hear you're having such financial difficulties.  It is tough and getter tougher everywhere.  I, too, wonder what the future is going to bring and am looking at my job ending at the end of the month.  I share your concern.

Want to share this with the community as a whole .. there are several places that can be of assistance if we find ourselves in need.  Many local churches have food pantries.  Our United Way has a 2-1-1 program (you can dial 2-1-1 and ask for some assistance with food and/or free medical clinics) that can also be useful.  In addition, there are community centers and the Salvation Army that provide some additional food and services.

Barb - I do have to agree that while eating healthy "may" seem to cost a little more, it can be done relatively inexpensively as well.  In our neck of the woods, chicken and tilapia still come on sale quite frequently and potatoes/sweet potatoes are not as expensive as some things.  We just have to watch how we cook these things and what toppings we use.  As for fresh fruits and vegetables, there are sales from time to time but they can be a little expensive.  A great alternative is the frozen food section.  You can buy them with relatively inexpensively - just watch the calorie count and nutritional information on the back of the package.

T O T A L L Y  agree with Barb that it is MOST IMPORTANT to be here for each other!  TOGETHER WE CAN DO THIS!

Dr Park made a visit to our community and I hope you will all welcome him.  I am grateful for the information he shared and personally plan to make some changes in my sleeping patterns.  http://www.medhelp.org/posts/show/778980

Supportive and Caring (((Hugs))) to all of you ...

I read Dr Park's post and it is an interesting topic.  With the way things are going with the economy and all, I suspect that this type of weight gain will be epidemic before it's all over.

It is expensive to eat healthy, but I wonder if it's really MORE expensive than eating junk food.  A family sized bag of chips costs around $3.99 and a 12 pack of sodas is usually around $3.79.  That $7.00+ could buy makings for a fair salad, or a couple of large bags of frozen veggies, etc.  That's just one example, but I think we are just seeing food, in general, getting more expensive.

I think the best thing we can do is watch for and pass on any ideas of things we can do to stay healthy while staying within our budget.

We also need to really be here for each other as much as possible in order to make it easier to deal with the roadblocks we all run into from time to time.

We CAN do this!!
