Weekend recipes

As well all know the holidays are coming again .I love having new recipes.We did this last year!! I am going to try to pull the post up to start this.  Plz everybody add to the already great ones we have had.

Delicious peanut butter cookies by me
INGREDIENTS:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter, room temperature
3/4 cup peanut butter, chunky or smooth
3/4 cup granulated sugar
3/4 cup light brown sugar, firmly packed
2 large eggs
1 teaspoon vanilla
PREPARATION:
In a bowl, stir together flour, baking soda, baking powder, and salt.
Beat together the butter, peanut butter, and sugars until light and fluffy. Beat in eggs and vanilla. Gradually beat in the flour mixture.

Wrap dough in plastic wrap and refrigerate until chilled, or about 2 to 4 hours.
Roll into balls place on cookie sheet press down on them with dinner fork
dipping the fork in flour helps the dough from sticking to fork...
cook at 375  for 8 to 10 minutes

1 gallon milk
1 block velveeta cheese
3 to 5 lbs red potatoes (leave skins on if desired--- I do!)
2-3 Medium onions
3-4 TBS chicken bouillon powder
Salt, Pepper, Garlic and parsley to taste
1 stick of margarine/butter

quarter potatoes and slice onions thinly. BOil them til nearly tender, drain and return to large stock pot.
Add in Milk, cheese (cut into quarters or so to help melt it faster), butter and spices. Cook gently, stirring often to prevent scorching until done.

Dumplings:

The last 5-10 minutes of cooking soup, mix 6 eggs and roughly 2 C flour in a bowl. Add pepper, parlsey, salt, and mix well.  Try to get it to a thick doughy consistency and not too runny. and drop into simmering soup and repeat til mix is done and cook until they are no longer raw in middle. (tip, if your first dumplings float up to the top fast and look like scrambled eggs, you need to add more flour, lol)  

You can also add cooked bacon or ham into this soup too!

Enjoy! This goes good with pumpernickle bread and salad!

Here's my family tradition for the Holidays....Even confirmed spinach haters love this one:

Spinach Madeline

2 med. onions, chopped
6 oz. Jalapeno cheese (note:  Velveeta used to make this, now I use their Mexican Cheese)
1/4 tsp. black pepper
1/4 tsp. salt
1/2 cup spinach water (reserved after cooking the spinach)
1 stick or margarine or butter (I prefer real butter!)
1 sm. can evaporated milk
1/4 tsp. celery salt
Dash of Worchestershire sauce
2 boxes frozen spinach
Bread Crumbs (plain - not the Italian variety)

Boil spinach, drain and reserve 1/2 cup of the water.  Saute onions in butter.  Add cheese, evaporated milk and spinach water.  Stir until cheese melts.  Add seasonings.  (Note - you can adjust seasoning to your taste...I always add a little cayenne pepper here.)  Add spinach to mixture.  Pour into casserole, top with bread crumbs and bake in 350 oven until thoroughly heated - generally 20 - 25 minutes.


This is a great make ahead dish.  I always make it a day or two ahead of time and just refrigerate.  Then, on the day, pop in the oven.  You'll love this one!

I'm going to make potato soup this week!  I haven't had what my Mom always called Peanut Butter Criss-Cross cookies in years!  Thanks for reminding me about them!  They were my Dad's very favorite cookie.  If you remember my story, his cancer diagnosis and death is what sent me into the spiral of drug addiction.  I'm going to make some for my daughter and husband in memory and tribute to him!  Thanks, guys!  I'm looking forward to more recipes!

I'm going to add one more...another family Holiday tradition and oh, so yummy!

Another tradition for the Holidays and a yummy alternative to "candied" sweet potatoes.  Give this one a try...it's so good it can stand as a dessert!

Sweet Potato Casserole

3 cups cooked, mashed sweet potatoes (you can bake them yourself or used canned - but if you bake them yourself they're better!)
2 eggs, beaten
1/3 cup milk
1 cup sugar
1/2 cup margarine or butter, melted (real butter is best!)
1 tsp. vanilla

Mix ingredients and place in large, buttered, shallow baking dish.  Sprinkle with Topping (below) and bake at 350 for about 25 minutes.  Make sure to check often after about 20 minutes to make sure topping isn't burning.  Sometimes you need to cook a little longer than 25 minutes to make sure topping is cooked and there aren't "dry" areas.

Topping:

1 cup light brown sugar
1/3 cup margarine or butter, softened but not melted (I won't say it again!  LOL)
1/2 cup flour
1 cup choped pecans

Mix butter, flour and sugar using a pastry blender or fingers.  Add chopped pecans, mix well and sprinkle evenly over top of casserole until all used.

This topping, basically, makes pralines on top of the casserole.  It is to die for delicious - and not the least bit fattening!  LOL

Keep sending the recipes.  I'm getting hungry sitting here.

If anyone is interested, I can submit some family Sicilian/Italian recipes from the "old country".

    heres another of my creations

Delicious Veggie Rice Medley

  Use Fresh and thinly sliced of the following:
Cabbage
mushrooms
carrots
rosemary leaves (about 15 or so of the "needles")

Use Frozen straight out of the bag:
Green sweet peas
green peppers
pearl onions
fully cooked Shrimp

About 1/2 can of chicken broth
1 1/2 cup of instant rice
season with basil leaves, salt and pepper and minced garlic

Saute veggies and shrimp in small amount of butter in large frying pan, then add broth and spices until broth is cooked out and veggies are desired tenderness. Serve over cooked white rice. Delicious!!

Spinach Stuffed Lasagna Rolls

16 oz of Pasta sauce ( I use Prego's roasted red peppers and garlic flavor)
10 oz frozen spinach- thawed and squeezed dry
15 oz Ricotta OR Cottage cheese
1 Cup Mozarella cheese
1 egg
1/4 tsp. rosemary (I used about 15 "needles")
1/4 tsp. ground black pepper
8 lasagna noodles- cooked and drained
Parmesean cheese

Combine egg, ricotta/cottage cheese, spinach, mozarella, rosemary and pepper. Spread evenly over each noodle and roll up. Spoon some sauce on bottom of baking pan  and arrange rolls over sauce. spoon remaining sauce over top of them, and you can add extra mozarella and sprinkle parmesan cheese over top. Cover loosely with foil and bake for 30-40 mins at 375.    Goes well with Basil garlic bread (recipe below)

Cheesey Basil Garlic Italian Bread

Desired number of Thick Sliced Italian Bread slices

Butter both sides of bread lightly and put on cookie sheet. Sprinkle desired amount of garlic salt on top. Cover each slice with a good dose of mozarella cheese, ground black pepper, basil leaves and parsley. Bake at 400 degrees about 5 minutes or until bread is desired crispness and not soggy


Mixed Broccoli Slaw

Mix in a large salad/serving bowl:

1 cup Miracle whip
1/2 cup sugar
1 TBS vinegar

and then add and stir:

Chopped broccoli, shredded carrots & cabbage (green or red), Cauliflower, a tiny bit of sweet red onion. I also put 6 slices of fried bacon in it (cooled and crumbled/broken smal

This bread is amazing.  It's so moist that it tastes like cake.  yummy.  It was so easy too.  I used real pumpkin which was easier than I thought.  I simply cut the pumpkin in chunks, removed the strings and seeds, microwaved until soft.  Then just scoop out the guts and puree in the food processor.  

INGREDIENTS
3 cups canned pumpkin puree
1 1/2 cups vegetable oil
4 cups white sugar
6 eggs
4 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 1/2 teaspoons ground cloves

you can throw in nuts or whatever extra's you want

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans.
In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Mix in any nuts/extra's.  Divide the batter evenly between the prepared pans.
Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed

This is one of Emeril's recipes.  My family and friends loved this last Christmas.  I made some changes, I used cheddar cheese and white mushrooms, and no eggplant.

Shrimp Gratin w/ Mornay Sauce
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
2 ounces grated cheese, such as Gruyere
Salt
White pepper
1/4 teaspoon grated nutmeg
1 cup bread crumbs
2 tablespoons finely chopped mixed fresh herbs
2 tablespoons grated Parmesan
2 tablespoons olive oil
1 pound medium shrimp, peeled and deveined
Essence, recipe follows
1 red onion, sliced
2 portobello mushroom caps, grilled
1 eggplant, sliced and grilled
Preheat oven to 425 degrees F.


Mornay Sauce:
Melt butter in a small heavy saucepan. Stir in the flour, increase the heat to medium-high and cook for 2 minutes, being careful not to let it brown. Whisk in the milk and heavy cream and cook, stirring constantly, until the mixture comes to a gentle boil. Cook until the floury taste is gone and sauce is smooth and thickened, about 3 minutes. Add the Gruyere and stir until melted. Season with salt, white pepper, and nutmeg. Remove from heat.
In a small bowl, combine bread crumbs, chopped herbs, Parmesan, and olive oil.

Season shrimp with Essence. Layer shrimp and sliced onion in a gratin dish. Cover with Mornay sauce. Top with bread crumb mixture. Bake until golden brown and bubbly, about 20 minutes. Remove from oven and let rest for 10 minutes. Serve over grilled portobellos and eggplant slices.

Omy everything sounds so wonderful.  I don't know where to start.  Thank you ladies for sharing .......I think I will try Troubles first....i am drooling right now, but sshhh thats not too lady-like.

This recipe doesnt have a name,


2 cups cooked cubed chicken breasts
1 lg bag frozen broccoli peices
2 boxes stove top stuffing
1 can cream of mushroom soup( can use cream of celery if don't like mushrooms)
1 can cream of chicken soup,
sage to taste
shredded cheese,


in 9x13 pan, add dried stuffing, chicken, broccoli and some of water chicken cooked in until moist, add both cans of soup and sage to taste, top with cheese and bake in 350 oven for 30 minutes. very hearty and good on cold days. hubby loves it and it is easy.  I also add some chicken stock to the water I boil the chicken breast in.  


Fruit salad Dessert

2 cups sour cream
2 boxes instant vanilla pudding
1 lg can crushed pineapples undrained
1 lg can pineapple tidbits drained
2 cans mandarin oranges drained
1 pkgs striped shortbread cookies broken in pieces
1 lg container cool whip
you can use marshmallows, coconut, nuts,cherries or whatever you want to add. I usually put part of a jar of cherries in it and save a few for the top and I always add nuts.

Mix sour cream with pudding mix,stir in pineapples,and oranges, fold in cool whip, cookies and whatever esle you are adding, you can decorate the top with cookies, cherries or whatever you want and sprinkle some chopped nuts over the top. Makes  9x13 pan and sometimes a little extra.. Enjoy!!!

with turkey day coming soon thought id share the recipe i use for stuffing in the turkey, its sooo good!

Savory Sage Sausage Dressing

1 Lb sage sausage (bob evans makes it in a tube and so do various other brands)
1 large onion- diced ( 1 cup)
3-4 Stalks Celery- diced ( 1.5 cups)
1 pkg (14. oz) cubed stuffing (pick any flavor- i usually get onion or sage for extra punch)
1 tsp. poultry seasoning
2 1/2 cups chicken broth
1/2 cup melted butter

in large skillet crumbled sausage. add onion and celery and cook until sausage is brown and onions are partially carmalized.   Mix rest of ingredients together in large bowl. (i usually put the poultry seasoning, broth, and melted butter into a large measuring cup and mix thoroughly with a wire wisk first to ensure ingredients blend fully, and then pour over the cubes and sausage mixture)  

Stuff turkey with stuffing,   or if using as a side dish-- bake covered in a casserole dish at 350 for 45 mins or until celery is done to desired tenderness)

I'd love the debate cheesecake! Cheesecake is by far my fav. vice!!!

& I also love cooking Italian food; anay recipes would be appreciated. I like to make them because we can reheat for a few days.

I have a good recipe for garlic mashed potatoes

Peel & boil potatoes; add a few sprinkles of garlic powder.
drain &
add butter and milk, mash  to desired consistency
add some parsley and garlic salt or garlic powder to desired taste; mix thoroughly
add a sprinkle of grated parmesan cheese or asiago cheese for each serving if desired.

This is quick and easy to make but it ads such a good flavor to the tradional mashed potatoes

  Homemade Gnocci

1 cup boiled potatoe - mashed up or shredded
1 tsp salt
1 egg
1 minced clove garlic
1 cup flour
1 Tbl butter

You can double or triple this- just match 1 for 1 for all the ingredi

Mix all ingred. roll out into "finger width" ropes. then cut with a fork into about 1 inch pieces, using the fork "roll" the pieces so that there is the indentation in each piece. Freeze pieces on a cookie sheet. Then when they are frozen, store in zip lock bags.
Bring pot of water to boil, drop gnocci in til they float to top. Drain, serve with spag sauce. My family LOVES these! They are alot of work, though. You have to enjoy cooking to be make these!

I admit, I'm a lurker in your forum.  There is always something interesting to read here, and I enjoy reading the answers to the clever questions you ask.  Maybe one of these days, I'll even answer one myself. :)  

I have a recipe for a hashbrown casserole that's great for the holidays because it makes quite a bit, and works great for potluck dinners.

1 30 oz bag of frozen country style hashbrowns
2 lbs bulk pork sausage (I use 1 lb of mild, and 1 lb of hot)
1 cup chopped onion
1/2 cup each chopped green and red bell pepper
1 can cream of chicken soup
1 8 oz container sour cream
1 8 oz container French onion dip
2 cups shredded sharp cheddar
salt and pepper to taste
1/4 lb melted butter
1 to 1 1/2 sleeves crushed Ritz Crackers or about 2 1/2 cups crushed Corn Flakes

Brown sausage.  In a large bowl, mix hashbrowns, onion, bell pepper, soup, sour cream, dip, cheese, salt and pepper.  Layer half the mixture in the bottom of a 9 x13 casserole dish.  Sprinkle cooked sausage over the mixture, then spread other half of mixture on the sausage.  Mix the crackers or corn flakes into the melted butter.  Sprinkle on top.  Cover with aluminum foil and cook at 400 degrees for 45 minutes.  Remove foil and cook and additional 15 minutes to let top brown.

I have a very similar recipe I use except mine doesnt have the sausage or onion dip in it or the ritz crackers LOL.   I m going to modify my recipe and use yours instead because it sounds even better! thanks for posting this. i just made these tonight and OMG this is really good!!

PUMPKIN PIE BARS  

1 lg. 29 oz. can pumpkin
4 eggs
1/2 tsp. nutmeg
1 1/2 c. sugar
1 c. chopped pecans or walnuts
1 tsp. ginger
2 tsp. cinnamon
1 (12 oz.) can evaporated milk
1 yellow cake mix
1 c. butter

Beat the pumpkin, eggs, spices, milk and sugar together and pour into ungreased 9"x13" pan. Sprinkle dry yellow cake mix and the chopped nuts evenly over the top of filling. Melt butter and pour over the cake mix. Bake at 350 degrees for 1 hour (no longer). It will seem soft, especially in the center. Can top with whipped cream or Cool Whip; serve hot or cold.

another one of my favorites for homemade Mac N Cheese casserole. I always double this recipe though and make enough to have leftovers with. So if you want more be sure to double everything. PS I never use the broiler and this still turns out perfect

GOLDEN BAKED MACARONI AND CHEESE  

¼ cup butter
¼ cup flour
1/4 cup diced onions (i sautte them first, but you can omit this if you'd like, alot of people dont like onions)
3 cups milk
1 cup grated cheddar cheese
½ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon pepper
1 teaspoon Worcestershire sauce
½ package (8 oz.) bite sized macaroni
1 cup grated sharp cheddar cheese
bread crumbs

Melt the butter in a large saucepan. Blend in flour and gradually add the milk, stirring constantly; add the seasonings. Cook until the sauce is thickened.
Add one cup grated cheddar cheese and stir until melted. Cook macaroni as directed, drain, and add to cheese sauce and mix well. Turn the mixture into an 8-inch square baking dish or pan. Sprinkle the top with 1 cup sharp cheddar cheese and breadcrumbs.

Bake in a 375°F oven for about 15 minutes. Remove from the oven and place under the broiler until the cheese is bubbly and lightly browned. Serves 6-8.
