I am so sorry for your loss.  It is never easy to say goodbye to a beloved pet.  No matter how long they are with us it is never long enough.

From the way you described him, he really was not healthy.  kYou mentioned that he was drinking a lot of water and that he would urinate while he was just sitting there.  It sounds to me like he was in complete kidney failure.  You also said that he was pale, which, depending on the degree of paleness, could indicate an internal bleed, which could be a sign of cancer or of a tumor that had ruptured.

The only way to tell for sure what it was that killed your dog is for your vet to perform a necropsy.  Your vet MAY be able to hazard a pretty good guess as to what the problem was from the results of the bloodwork, but for an exact diagnosis its best to have the necropsy.

Once again, I am sorry for your loss.

I'm with Ghilly on this, sounds like kidney failure to me too. My loving German Pointer was healthy one day then he started getting a little sick then 16 days later he had passed from a extremely aggressive brain cancer. I had the necropsy done and the vet told me that in dogs cancers can move so fast the animal can die before the owner even knows there's a problem.

I'm so sorry for the loss of your beloved Maltese.
