What you should know is that it is not the test that causes you to have hiv. It serves to informs you of your true status. Knowing your real status can relief your anxieties (and allow medical care to and prevention measures to be performed).
Please go get your test now. Until then, there is really nothing else that this forum can do for you.

No, I've never tested for HIV, because, and I know this is foolish, I'm genuinely terrified of the results. I didn't think to at the time and it's only now having read up on symptoms that I have grown concerned.
It worried me that this thing on my tongue and throat never went away in all this time, even though I rarely get ill in any other way.

8 years ago? Hmmm, if you have gotten hiv from that incident 8 years ago, you would probably have a little more severe issues now than just some throat infection. Your apparent good health after 8 years is in itself good evidence against hiv.
It is also highly unlikely that you had any other sti's and have not yet shown the typical symptoms of them yet.
Have you been tested for hiv yet?
Why not just do one now and you can then put your mind completely at ease. That said, i highly doubt you had hiv from that incident 8 years ago.

It has been long enough to test for HIV and get a conclusive result for this exposure, there is really no reason to keep guessing and worring about being infected.
I can say that 30 sec of unprotected sex is not a huge risk for infection, but it is still a risk so testing is needed to rule out this possibilty. Odds are on your side for sure.
Symptoms do not start that late after infection, 2-4 weeks after and last 1-2 weeks. plus symptoms do not mean anything only a test can tell you your status. Your symptoms do not even sound like HIV symptoms anyway.
Test now that it has been more than 3 months and put this behind you for good and next time always use a condom
