why some people felt bad just few momments after consume high fat food?

hi. I'm medical student. In my lecture, my proffesor does mention that cholestrol would need at least 10 or 20 years to give effect.so if someone got problem with cholestrol,its because of bad life style for 10 to 20 years instead of just because you eat high fat food the day before

my question. In some people, I found out that they felt something wrong with them,for example trembling or pinched hands after they eat peanuts or fast food. why this happen? is this psychological effect? Thank you
