Once you have acquired Epstein Barr Virus, it stays dormant in your body the rest of your life. However, certain factors (stress, other sickness, etc.) can cause a re-activation, where basically all your symptoms are like the initial infection. So technically, the doctors are correct; you can't get EBV again because you already have it. But the symptoms can return, so that's something to watch out for.
