My Mom told me that Over cooking chicken meat, making it "hard" is bad for the digestive tract. Is that true?

You're fine, it's better to overcook the chicken than to undercook it.

Welcome to the gastroenterology community!  If it is truely burnt and charred, then there are some claims that it could be bad for your health in the long term.  But if it is simply just overcooked, then it is fine to eat, although it may take a little longer for you to digest it.
