Low Ejection Fraction??

So my Gallbladder's functioning at 26%, which is below normal. My Dr. said it's not recommended for surgery because I'm still under 21(which they consider a child). Is there any way at all that my gallbladder will go back to functioning normally? If not, what do you recommend I eat? I am afraid to eat just about anything because I am also severely emetophobic, so I have a strict diet.

That is untrue, mine fraction rate went from 10% (abnormal) to 73% within a month.

Your gallbladder EF will not get better. If anything as you get older you will start to have attacks, I did not have stones but had a slow gallbladder and out of blue i started getting attacks... you can stay on a low fat diet, try and cut red meat and pork, greasy food and high fat foods out, and dairy stick to non fat and skim milk this will help a ton!!  You are not to young to have your gallbladder out..there was 2 girls under 20 in my surgeons office that told me they had theirs out, so depends on surgeon I guess.

just for purposes of information:
my cousin had her gallbladder out at a young age
10, 11 , 12, or 13... but it was definitely before her 16th birthday..
so your doctor is misleading you !
