chronic loose stools

i'm a type 1 diabetic, diagnosed 4 years ago, 36 years old.   also diagnosed with celeac.  i follow a strict gluten free diet.
i am also vegetarian, and i limit dairy consumption.  
for years now i have had loose stools.  no abdominal pain, or discomfort, or cramping.  and i don't feel sick.   i have 3-4 bowel movements in the morning,  the first being the most solid, then progressively getting worse.  also finding undigested food in bowels.
the situation improved greatly, over night while i was on antibiotics for an unrelated illness, but then worsened again when i stopped taking them.
i have tried probiotics, but without success.  i have tried altering my diet, thinking i have too much fiber, but nothing seems to help.
i mentioned it to my doctor, but she didn't seem all that worried and didn't want to prescribe anything.
i feel like this will never end!  should i see a specialist?  i am making an appointment with an endocrinologist to try to get my diabetes under control, should i see someone else as well?

i did go dairy free for about 6 weeks, didn't notice a difference, i had the same thought, i was sure it was the dairy!  but alas...
i don't think i have nerve damage, i'm a relatively new diabetic, i haven't had any complications at all yet.  liver and kidney function is normal, i just had that checked.  cholesterol is normal too.

Do make sure that your diabetes is under control because unregulated diabetes can result in nerve damage that can impact your digestive system. You may also want to consider finding out if you're cross-reactive to casein, the major protein in dairy. Many celiacs are. There's a test that's put out by enterolab.com that you can check into.
