Soft serve stool and possible causes?

I have soft serve stools. The GI doctor said the problem is a result of stress. He did a colonoscopy and endoscopy and said everything was fine. I am also lactose intolerant.  I have no stomach pain. I try to avoid fatty foods and processed foods. I used to enjoy whole grain cereals for breakfast, but no longer. Pasta dishes and tomato sauce are also a no go. Nothing fried. Nothing oily. No more pizza. Hamburger/Steak sometimes very binding, other times goes right through me. Salads and vegetables don't seem to solidify my stool, just speed up transit time. Tried probiotics for a couple of days but no immediate changes. I am running out of things to eat. Is it stress or ???

Hi - is there an update to this issue? Were you able to determine the cause of the 'soft serve' movements? Thanks.

I realize this is an old posting but I have the same symptoms and I decided to search the web for answers. Would you mind sharing any updates  from your condition and search for a cure over the past two years??? Thank you!

Thank you for the reply. There is no history of celiac disease in the family nor do I get rashes or bouts of fatigue. As for "brain fog", the only symptom I have would be trouble concentrating. I did once experiment with a gluten free diet for a week and it didn't change my stool. As previously mentioned, I avoid processed foods, but I wonder if the preservatives in the foods I eat might be the problem, e.g. I have never tried to consuming strictly organic produce, etc.?

Are you intolerant to just lactose, or is it dairy in general? If it's dairy in general, there may be something different going on - food intolerance to casein, the major protein in dairy.

You state you're having problems with wholegrains, pasta and pizza. Any possibility there may be a problem with gluten sensitivity? Any history or that or celiac disease in your family? Do you get rashes or have bouts of fatigue or 'brain fog?'
