All the sex you had was protected, therefore HIV is not a factor. It is possible you have some other infection, or std. Get tested and consult your doctor
You do not have HIV from the exposure described. ARS symptoms are therefore not a cause. You mentioned your wife had gastroenteritis which you may have. I suggest you consult a doctor but it is not HIV

Freaking out this morning about my symptoms. So are you saying that my symptoms are similar to ARS symptoms? Or do you think it's most likely a result of the stomach flu that my wife and daughter had? Can it be ARS without a sore throat?
More importantly, since I had high risk encounters, is it more likely that I got infected with HIV or is it likely that I didn't get infected?

1) Sex with an unknown individual is always high risk, despite using a condom. You can still contract other STDs from simple skin to skin contact.
2) Low grade fever, diarrhea would fit, but a lot of things can cause fever and night sweats, any type of infection, fungus, parasite etc.
6) If it was protected and used correctly, then no.
7) It is possible, somewhat unlikely from vaginal sex
7a) Your body is fighting something, it will return to normal when your infection subsides.
8) you can donate on any HIV website to research or support.
The bottom line is, that you had a bunch of high risk activities, you should evaluate your behaviors for both your sake and your wifes. Get your HIV tests done after 1 month using a 4th generation test. If it is negative, try to move on, You can follow up at 3 months, but it would be unlikely that it would turn positive. Best of luck.
