Some people believe ciliac is really just a wheat intolerance, and some believe it's a problem with all glutens. But your question is way too general -- most real food is healthy for some and not for others, as our digestive systems differ, and all phony food is unhealthy. But watch for one gluten-free trap -- most packaged gluten-free foods are quite unhealthy, loaded with artificial ingredients and sugar to make them taste more like gluten containing foods, even the ones in the health food store. But basically, whole foods are the healthiest, and lots of colored vegetables, some fruit, whole grains (there are those that don't contain gluten, such as millet, quinoa, rice and others, and some fruits we think of as grains such as buckwheat and wild rice), legumes, fish, you know, the same foods that are healthy for anyone minus the gluten.
Hi,
Nice to see your question. Gluten is a protein extracted from wheat and other grains by washing the starch out of the grain. People who cannot properly digest this protein suffer from celiac disease, an inflammatory condition of the small intestine.
