what does it mean?

What does it mean when you're "measuring ahead"? Meaning if I'm 33 weeks why would they say I'm measuring at 30? Vital!

Every time I go to the doctor they say our measuring is off because we'll think I'm like 20 weeks and the ultrasound will say something a few days off but they still keep my due date the same

Wouldn't you be behind them? Measuring ahead would be the other way around. So you'd be 30 weeks, but you'd measure 33 weeks. There's multiple reasons for this. Either your baby is just a little bigger, you have a little more weight gain or you have more fluid. It all depends. If your doctor isn't worried, then I wouldn't either. I measured ahead by two weeks up until about week 33, then I evened out.  Good luck
