I don't know if you still look at this page. But I too have your swallowing problem [ or at least something very similar], its called a 'stricture' http://en.wikipedia.org/wiki/Esophageal_stricture.
Had it since I was a kid, doctors said at first that I eat to quickly, although eating at a snails pace didn't stop in. In my case the put a tube down my throat, under sedation, and ripped it open. Worked great for the last five years, but appears to have started growing back, Good Luck

Have you considered food allergies? They often make your throat swell and can be very dangerous. Also, they can start at any time in your life. I am 50 and am just now having fooding allergies to items I have had all my life.
I've had my tonsils out. Today I've noticed some sore spots within my mouth but I was able to eat this morning (eggs). My throat still has a lump in it but I can swallow. So hopefully its gone? I'll probably have to see my doctor next week if it happens again.
