Truly looking forward to trying it this weekend. Usually try new things over the weekend when I have time to cook .. then I have several days to bring to lunch or eat at dinner my new creations. Have really expanded my cuisine in doing so. Just because a person is eating healthy, they do not have to sacrifice flavor or texture!
Can hardly wait to have Christmas in November!
We're going to be having another challenge in November (Thanksgiving theme), December (Christmas) and January (New Years) ... please keep your eyes open for some recipes that may help us all in making yummy healthier choices!

You are a DEAR!!! Thanks SO MUCH for sharing the yummy meal ideas! I just learned to like salmon a little over 2 years ago .. and I LOVE it!!! Now YOU and I share the love of Parmesan cheese. I use it in everything from salads, to omelets to veggies .. a little goes a long way, packs a lot of flavor and is easy on the calories! I didn't know that most lactose intolerant people can tolerate it .. thanks for sharing that tidbit!
Now .. the feta spinache chicken sound truly yummy ... Will cook it this weekend and report back. Sounds delicious and sooo elegant too! Hope you'll continue to share .. (hint, hint ... loll)

Ohhh if you like Salmon, I am endlessly promoting it.
4oz of Salmon has 100-200 calories prepared and 20 grams of protein and is mm mm delicious. ;). Lemon/lime juice, pepper and a dash of salt keep the calories down, than drizzle it with just a touch of olive oil. Pan frying it in Olive oil isnt terribly sinful, you can also bake or broil it. Brown rice boiled in low sodium beef/chicken or vegetable broth adds a kick without the calories of butter, and I am a huge fan of any green vegetable steamed/cooked and sprinkled with parmesan cheese...I know it SOUNDS strange but it tastes great to me. Parmesan is tolerated by most lactose intolerant people, is very low in calories and fat and packed with flavor.

OH and I have this great recipe for feta/spinache chicken.
Fillet boneless chicken breasts in half but do not cut through the second side, creating a long slice of chicken. Combine in a bowl unthawed spinach, feta cheese, and two eggs, mix the ingredients together. Beat the chicken to tenderize and spread the meat. Put the filling in between the chicken and make a wrap (think cordon bleu or pigs in a blanket). Pam spray a glass bakeware pan. Bake chicken wraps at 350 for a minimum of 45 minutes (may take longer).
SOOO good! I cooked this dinner for my parents while visiting and my dad had thirds. (of course, he can afford it).
