Joy that sounds pretty darn good. I LOVE quesadillas...do you add any liquid to the crockpot? And what kind of seasoning? lol I like that idea!
Take a look at the Healthy Cooking Forum on MedHelp. Many of us here belong there too and there are so many great recipes to try. When you go to the community and look at the top you will see the green post a question. To the right of that is view community archives. Click on this and you will see a list. LOL! Well you can make enchiladas but that has a lot of fat in it. Quesadillas might be more healthy than enchiladas. I just throw chicken, peppers, and onions into a crockpot with some seasoning (I never use packaged taco seasoning--- they process those and they're one of the worst things for you). After a few hours, when the chicken has cooked to 165F I shred it up.
Spray a little PAM into a skillet and let it get warm. Place a tortilla in, spoon in some chicken/peppers/onions and top with low-fat mozarella cheese. Place a second tortilla on top. After a few minutes, turn quesadilla over. Cut into fours and serve with salsa.
