Cherry Snowballs
INGREDIENTS
1 cup butter (no substitutes), softened
1/2 cup confectioners' sugar
1 tablespoon water
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup quick-cooking oats
1/2 teaspoon salt
36 maraschino cherries, well drained
COATING:
2 cups confectioners' sugar
1/4 cup milk
2 cups flaked coconut, finely chopped
DIRECTIONS
In a mixing bowl, cream butter, sugar, water and vanilla. Combine flour, oats and salt; gradually add to the creamed mixture. Shape a tablespoonful of dough around each cherry, forming a ball. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 18-20 minutes or until bottoms are browned. Remove to wire racks to cool. Combine sugar and enough milk to achieve smooth dipping consistency. Dip cookies, then roll in coconut
1 can of mild or hot chili beans depending on your taste
1-8oz pkg of Philly cream cheese
1block of pepper jack cheese
spread cream cheese in bottom of microwaveable glass pie dish,pour beans over top of cream cheese,slice pepper jack thinly and place on top of beans,microwave at 1 minuet intervals on high untill pepper jack is melted,use favorite chips,corn chips to dip and enjoy

I made these over the weekend and OMG they are soooooooo good and super fast and easy to make. The kids loved helping and sprinkling them with pretty colors too! I used the semi-sweet/dark chocolate for this and it was superb! These would go great for a holiday party or make gift sacks out of them too. PS i dont have a double boiler, just melted the choc. in a normal saucepan and had no problems with scorching or anything.
Chocolate Covered Pretzels
Ingredients
2 bags chocolate chips (dark or milk chocolate)
1 bag pretzels (logs work well for this, but you can try any of the medium to thick variety of twists)
Chopped nuts, for garnish, optional
Colored nonpareils, for garnish, optional
Sprinkles, for garnish, optional
Coconut, for garnish, optional
Crushed cookies, for garnish, optional
Directions
Melt chocolate in double boiler over medium heat on stove top. Using tongs, or your fingers, quickly dip pretzels in chocolate allowing the excess to run off. Place dipped pretzels on waxed paper lined cookie sheets. Sprinkle with chopped nuts, colored sugars or other toppings. Allow to harden. You may need to refrigerate for a while to help this along. Once hardened, remove from sheets and store in a cool location, with waxed paper between layers.
Tip: Package pretzels in clear cellophane bags or in vase for festive gift giving!

yesterday i finally made Beef Stew with homemade parsley dumplings! it was really good!
I used:
2 lbs sliced sirloin beef strips
6-8 carrots sliced
2 onions
1/2 bag frozen peas
1 lb fresh green beans
small wedge of cabbage sliced thin
potatoes
6 stalks celery (including the leaves- they give a ton of flavor)
1 pckg stew seasoning (dry envelope)
3 cups water
Parsley dumplings:
PARSLEY DUMPLINGS:
1 1/2 c. flour
1/3 c. chopped parsley
2 tsp. baking powder
1/2 tsp. salt
2/3 c. milk
2 tbsp. oil
1 egg, slightly beaten
1/4 tsp black pepper
In medium bowl mix flour, parsley, baking powder and salt. Stir in remaining ingredients just until blended.
I can just taste that bread puddin. As for the pumpkin fudge, will have to drive to Helen,Ga or Cherokee,N.C. That's where I discovered the p. fudge first. If I' not careful, I'll gain all weight back. I just finished a SLICE of German Choc. Cake. Really didn't want all of it but ate.
