It doesn't matter what time of the day you start taking it, just pick morning or bedtime, and start with that. You can always adjust the dose time to help you tolerate any side effects (if you even have any), down the line.
As for the Xanax, a short term course of Xanax to be taken as needed during your adjustment period of the Zoloft would be okay. Taking a benzo for sleep isn't usually ideal. This is something you will have to discuss with your doctor. Are you prescribed Xanax?
