Any suggestions?

I am listing my symptoms to see if anyone might have a suggestion as to what I might have going on.
I do know I am hypothyroid and at one time, according to saliva testing, I had adrenal insufficiency.  These symptoms began 1 1/2 years ago and I have been too sick to work since.

Severe (and I mean severe) am fatigue and weakness.  I cannot get out of bed until approx. 10 am, after waking up off and on all morning, trying to talk myself into moving.  
Frequent, intermittent episodes of inability to focus/concentrate with small spurts of dizziness in my head
Heart frequently pounding in my ears.  This is also an intermittent issue that I cannot seem to correlate with anything
Dry, blotchy skin with sun spots more visible and overall ill appearance
Paleness at times
Depression with absolutely no motivation
Decreased urination and even sometimes I notice my urine feels thicker although the color is the same
Cold feet and hands, sometimes feet look purple
Night vision not as good and is especially worse when I have the episodes of foggy feeling/ill days
Anxiety
Almost a complete inability to handle any stress at all
Constant hunger and never feel full when I eat
weight gain from eating so much, I assume
Hair falling out
Hair texture completely different
Eye sclera reddish sometimes reddish yellow.  Just looks like I'm sick
Intermittent severe mid abdominal pain, almost described as pancreatitis but it resolves itself within about 30 mins. I've had 5 episodes of this pain in the past 2 years and when it happens, it is so bad, I have almost passed out each time but with elevating my legs, I was ok until it passed.  My blood pressure does run low but when this happens, it really drops.
I also see a stool color change from what I would call normal to a light color brown that seems to correlate with days of feeling very bad
I take high doses of vitamin C (Lipospheric Vit C) due to recurrent Epstein Barr infections, and I've found I feel so much better when I take vitamin C and if I happen to run out before I get more, I begin getting feeling very ill, like I am going to be very sick but when I get back on the vitamin C, that feeling goes away.  The vitamin C also gives me more energy.
Also, when I initially got sick, I had severe, severe thigh pain that finally stopped with the use of a very good Magnesium supplement I found.
I have no idea of this has anything to do with anything, but most of my life (I'm 53) I've had elevated cholesterol.  Not severe but elevated.  I know it's a heredity thing and I've been in great shape most of my life until now.  Anyway, the last test I had done, my cholesterol had dropped a whole lot and is now great!  The endocrinologist asked about my cholesterol but didn't say why.

Prior to "crashing," I was a hard working, fast thinking hospice nurse and now, my life is this and definitely on hold.  I really, really want to get better and be able to work again.  It feels almost like I sort of lost my mind!   I was feeling very tired and having bouts of sleeping 12-24 hrs at a time when I wasn't working and then one day, I honestly crashed!

Off and on now, I have days of feeling great except the waking up part in the morning, but as soon as I think I am feeling better for any period of time, it seems like I crash again.  
I do have some lab numbers if anyone would like.
I believe this has to be an endocrine related problem but maybe I'm wrong.  I've been seeing an integrative medicine doctor since getting sick and he seems to have the attitude of, give it time, relax, let my body heal itself.  He also believes I have probable damage from the Epstein Barr virus, as the titers are very high.  At first, I was all for the body healing itself, because I wasn't getting farmed out to a million different doctors, but now, I'm not so sure I did the right thing.  I have seen an endocrinologist and had multiple labs run but he moved out of state and I am awaiting an appointment with a new doc.  I have those labs that haven't even been reviewed by a doctor!  My family doc doesn't feel comfortable reading them and I didn't even tell the integrative doc I went.  I sort of understand them but as I've read some of these posts here, I realize there is sooooo much I have to learn.  In nursing school, the endocrine system was definitely the hardest subject and not one I've dealt with much, until now.

I really would appreciate anyone's input!  Even a suggestion would be great!  The more the better.  Thank you!

I would look up acromegaly. It fits some of what you have going on..
