Whether you're over weight or not, depends on your height. If you're taller, you should weigh more.
You're right that not eating breakfast and only eating one meal and snacks during the week is not healthy, but even that depends on what the meal and snacks consist of. A good meal with lots of protein (chicken, fish, meats, dairy, etc) and lots of veggies and maybe a fruit is much better than a meal with potatoes, gravy, bread and no fruit or veggies. Snacking on fruit or raw veggies, is better than snacking on chips, candies, pastries, etc.
Even if you're not hungry in the morning, you need something to help fuel your body. Try a small serving of yogurt... it's got plenty of protein. Also try a scrambled egg with spinach, tomatoes, etc. If you don't have time for breakfast, you should get up a little earlier to make sure you do have time. You also need some lunch - a small chicken salad, etc would be excellent.
Not all of us are lucky enough to get a thigh gap back. Walking is one of the best exercises you can do to lose weight. Many of the Wii games are good. I have WiiFit and I love it. Yoga is excellent exercise, because it strengthens your core muscles and makes you stronger. There are plenty of "Walk" videos on YouTube that are fun to do, as well.
