Thank you :) I'm not a big meat fan to begin with, let alone red meat, and I only eat lean meats now.
Fat from red meat, is not the good kind of fat; that's saturated fat and you want to stick with monounsaturated and polyunsaturated fats. When you eat meat, be sure to trim as much of the fat as possible, so the meat is lean as possible. Good fats are those that come from avocados, olive oil, nuts, seeds, etc.

I do drink 1% milk, and I have cut gluten because of an allergy. I've been watching my "bad fats", and trying to get what fats I eat from meats and nuts.
I will watch the fruits, as well, so I don't get that many sugars.
It sounds like you have a relatively sensible plan going. Implementing a diabetic diet, such as you have is a good idea because it centers on low gycemic foods, which are those that don't raise you blood sugar a lot.
You might want to limit your fruit intake to those such as apples, pears, etc which have very high fiber content and not so much sugar.
I agree that you need some fat in your diet, so opting for fats such as those that come from avocados, olive oil, nuts and seeds is best.
It's not necessary to eat a lot of meat - you can get protein from eggs, dairy, beans, etc. Just make sure you get enough.

I'd like to start by saying, you should focus less on trying to cut fats out of your diet, and focus more on cutting out BAD fats and intaking GOOD fats. When your body gets low on good fast people can have problems losing weight, menstrual problems, heart problems, etc. Good fats: avocados, extra virgin olive oil, coconut oil. Avoid the bad fats: animal fats, greese, fried, butter. Also, maybe you should try limiting your sugars, you might be eating too much fruit and in turn high sugar levels. You might need to now and then get whole grain gluten free grains because your blood type may be a type that relies on grains to lose weight. Maybe cut your milk to 1% or skim or switch to soy or almond milk. Avoid alcohol. Take fish oil, omega 3s, vitaminE oil, and a multi vitamin. Try to work out, but don't over stress your body. My ex coach at dance camp over worked me and now I have knee problems. Make sure you intake enough calories when working out. Avoid sweet teas and coffees from restaurants, they often are mostly sugar and fat and have HUGE amounts of unhealthy calories. Try cooking with coconut or olive oil. Hope I helped :)
