What happens if you deviate from low-fat diet if your gall bladder has been removed/

Recently had my gall bladder removed along with stones that were in the bile ducts.I've been instructed to go on a low-fat diet, which I have started. My question is : what happens if you deviate from the diet. What if you ocassionally eat high fat foods like pizza or ice cream? ( not that I'm considering it, just wondered)
