CHALLENGE POST - Healthy Eating & Broccoli

When it comes to basic nutrients, broccoli is a huge winner! Ounce for ounce, broccoli has more vitamin C than an orange and as much calcium as a glass of milk, according to the USDA's nutrient database. One medium spear has three times more fiber than a slice of wheat bran bread. Broccoli is also one of the richest sources of vitamin A in the produce section. But the real surprise is this vegetable's potent cancer-fighting components.  Broccoli is rich in substances called isothiocyanates -- chemicals shown to stimulate the body's production of its own cancer-fighting substances

And all along I just thought that it was tasty!  So with so many health benefits to be gained from eating broccoli, I was wondering it you would all share with me your favorite ways to cook broccoli.  

I enjoy broccoli in stir frys made in my wok at home and I also enjoy it a great deal raw as one of the veggies in a veggie tray.  How do you take your broccoli?

How I love broccoli!  I love it steamed with just a drop of olive oil on it.  I put it in curries and stir fries and love to sautee it in a bit of olive oil and garlic with slivered or sliced almonds.  I also enjoy broccoli salad - raw broccoli, light mayo, grated carrots and raisins.  Let it sit for a few hours and delicious!  My favourite Chinese food dish is sauteed broccoli and shrimp with mayonnaise and sesame seeds.

I prefer it steamed with a SMALL amount of cheese sauce (low fat, of course) or maybe just some lemon juice, salt & pepper.  Broccoli is one of my favorite veggies, but I've had to curtail my intake, as I'm told that it and cabbage, along with other cruciferous veggies, inhibit absorption of my daily  thyroid med.  Am looking for a "new" favorite veggie!!

I love to steam the broccoli  along with cauliflower and eat it raw.  However, I was just recently told not to eat it raw anymore due to my thyroid issues.
