That's an excellent motto to have.
I agree with you that if you are going to skip a meal, it should be dinner. I often end up just having something very light - a salad, popcorn, etc at dinner time because my hours are so different. I used to go without breakfast all the time, but now that I've gotten into the habit of eating it, I can't get through a morning without it anymore.
I have a very good book that advocates "eating every time you are hungry, but stop as soon as you begin to feel full". The author also uses your "Eat to live, not live to eat" idea as well.

Back in high school I could go without breakfast. Now, there is no way. If I am to skip a meal, it would be dinner. That's only if I had a late or big lunch. I love to eat.
